Breakfast change-up: Banana Coconut Flour Pancakes
Breakfast is one of the most precious meals to me. After Tomy and I both have our quiet time with Jesus, we work together to create the first meal of the day where Tomy typically washes the dishes, while I mess them up J For us, Breakfast typically consists of scrambled eggs with coconut oil, red/yellow onion, green peppers, mushrooms, spinach, and sausage (nitrate and hormone free – brand is called Niman Ranch and is available at Fosters here in Cayman). On the side of our meal, we have some fruit, veggies and maybe additional protein if there’s left overs. Sometimes, we will add in/substitute our sides with sweet potato or Paleo Porridge (see my post on March 14th for the recipe). Yet, although we love and look forward to this typical meal, sometimes we just want a change-up. And for the last week, I’ve been craving some banana pancakes.
Whenever it comes to special meal treats, I typically make them on the weekend when I have more time. However, I decided to get up a little earlier today to make these pancakes which actually didn’t take that long to make! These pancakes were delicious and consisted of bananas, egg, cinnamon, vanilla extract, and only a little bit of coconut flour. The bananas we had in the house were super ripe, so there was no need to add syrup or honey, but feel free to if you would like!
So here’s my recipe for the week. Take some time out of your normal schedule to treat yourself to these amazing pancakes this week! Enjoy my fellow food adventurers!
Coconut Flour Banana Pancakes (adapted from Fast Paleo, recipe taken from My Fit Family)
Ingredients
- 2 bananas
- 3 eggs
- 1/2 tsp vanilla extract
- 2 TB honey (I didn’t use honey and it tasted great without! but up to you 🙂
- 2 TB coconut flour
- 1/2 tsp cinnamon
- coconut oil or olive oil spray
Directions
- Mash the bananas and mix in the eggs.
- Add in vanilla extract, honey, coconut flour and cinnamon
- Let batter sit for about 5 minutes.
- Add oil to pan and on medium heat drop about 1/2 dollar sized amounts of the batter onto the pan. Let them cook for about 4 minutes ( a bit longer than your usual pancake) before flipping them.
- Top with syrup or eat them plain!
