Okra…That Won’t Disappoint!
Okra is not usually a go-to vegetable for most people. Most say that it’s too slimy and lacks flavor and taste.
And up until a few months ago, I was one of those people. I had only experienced okra boiled, with no additional flavors and seasonings and thus, had no desire to eat it at any point in the future.
Until, I tried the okra from Peppers in Cayman.
Not only did it have flavor, it was cooked with seasonings, onions and peppers – some of my favorite vegetables to cook and simmer down.
I love it so much that I honestly will not go to Peppers and NOT get it. It’s that good!
And when I think something is good, I talk about it – ALOT. So naturally, I shared it with my friend Vickie, blogger and cook of From the Ground Up. And Vickie, who also disliked okra, came to somewhat like Pepper’s okra.
However, Vickie wanted to take on the challenge to add even more flavor to okra and create her own recipe that was Paleo delicious and Paleo approved. She wanted a recipe that would be lighter on her stomach and possess the two main qualities she liked in her food – savory and spicy.
And guess what? I now have a new favorite place to get okra – Vickie’s kitchen.
Vickie’s okra is absolutely delicious. Filled with spice and flavor, it never disappoints. Made with jalapenos, tomatoes, garlic, and grass fed butter, it will make your mouth water – both from the deliciousness and the spice!
If you too are a skeptic of okra, I completely understand – I’ve been there. But listen, you will only be doing an injustice to yourself if you don’t try Vickie’s recipe. It’s absolutely too delicious to pass up.
